We spent many hours exploring the dusty backroads of Lodi looking for the grapes that are necessary to make the kind of Cabernet that we like - concentrated, powerful, with flavors of blackberries, dark cherry and cassis. High 7 Seas follows its bold, fruity midpalate with dark chocolate notes on the finish, and plenty of lingering spiciness in reserve.

This Cabernet is a delicious surprise from Lodi - a formidable, yet under-appreciated wine region. High 7 Seas is made in a totally modern, state of the art facility by a young, motivated winemaker that had trained overseas in some of the world’s greatest wine cellars. The result is a distinctive, polished, plump and tasty Cabernet - a fruit forward wine with medium body.
Lodi’s Cabernets are a totally unique expression of this coveted grape variety. Tasted blind, High 7 Seas recalls the famous wines of neighboring Napa Valley, but with a rich, dusty, savory profile that is distinctly Lodi. WINEMAKING PROCESS: Cabernet Sauvignon is all about the balance of fruit, savory elements, and ripe tannins. To that end, High 7 Seas is a result of a real focus on extracting just enough of each, but not too much to render the wine clunky and heavy on the palate. With all of the most modern winemaking tools at our disposal, High 7 Seas has been expertly rendered to reflect the heights that Cabernet Sauvignon can reach in Lodi.
